Pecan Oil Vinaigrette

A smooth, nutty twist on a classic dressing—perfect for salads, roasted vegetables, or even as a marinade.

Ingredients:

  • 1/3 cup pure pecan oil
  • 2 tablespoons apple cider vinegar (or white wine vinegar)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 small garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. In a small bowl or jar, combine the vinegar, mustard, honey, garlic, salt, and pepper.
  2. Slowly whisk in the pecan oil until the dressing emulsifies, or shake everything together in a sealed jar.
  3. Taste and adjust seasoning as needed.
  4. Store in the fridge for up to a week. Shake before each use.
